Time for a Recipe….Chili Paneer with Apples and Onions

This is a recipe of my own creation…
Paneer part:
I take ready made paneer and chop it into cubes and I bring it to a boil for two minutes with some haldi and jeera powder then I take it off the heat and strain it and brown it slightly in some ghee and set it aside.

Pepper part:
4  Large peppers, Red, yellow, orange in large-ish chunks or strips
3  Hari mirchi chopped finely
2  Tsp Grated adrak (fresh ginger)
1  LARGE onion sliced thinly
2  Sweet apples grated on a mandoline slicer
3  TBS Tomato paste

Spices:
2 tsp Whole jeera
3 tsp Dhania powder
1 tsp Laal mirchi powder
1-2 Tsp sugar

Use highest heat possible without burning…
Add whole jeera to sizzle in oil in pan for 30 seconds or so, add onions and apples and caramelize, add peppers and hari mirchi and adrak on high heat and stir, parts of pepper will scorch and that is fine…add tomato paste, dhania powder and laal mirchi powder and and sugar stir and cook for 5 more min. add a splash of cold water if too dry.
Take off heat add paneer and stir lightly
garnish with fresh dhania leaves and a lemon slice.
